Ingredients:

  • 2 ripe bananas
  • ¾ cup pumpkin puree
  • 2 Tbsp. coconut oil, melted
  • 2 Tbsp. unsweetened applesauce
  • ¼ cup maple syrup
  • ¾ tsp. vanilla extract
  • 2 eggs
  • ¼ cup nonfat plain Greek yogurt
  • 1 ¾ cup whole wheat pastry flour
  • 1 tsp. baking soda
  • 1 tsp. pumpkin pie spice
  • ½ tsp. cinnamon

Directions:

  1. Preheat oven to 350°F. Grease a bread pan with nonstick cooking spray.
  2. In a small bowl, combine the flour, baking soda, pumpkin pie spice and cinnamon. Set aside.
  3. In a separate bowl, mash the bananas with a fork. Stir in the pumpkin puree, coconut oil, applesauce, syrup, vanilla extract, eggs and yogurt.
  4. Stir in the flour mixture.
  5. Pour the batter into the greased bread pan. Bake for 40-45 minutes or until a toothpick comes out clean.
  6. Let the banana bread cool on a wire rack before slicing and serving.
