The Leaf Dirt Pudding Cups Recipe

Who says “dirt pudding” is just for the kids? Featuring rich, chocolatey flavor, a smooth and creamy texture, and a fun, fresh theme, this classic sweet treat is the perfect dessert—no matter what your age.

Best of all, this dirt pudding cups recipe is extra sweet. Not only because it’s ridiculously delicious but also because it’s totally guilt-free. At just about 200 calories per serving, our health, wellness and recipe bloggers at The Leaf created this dessert concoction that won’t tip the scales like most other decadent desserts. Plus, one serving contains a whopping seven grams of protein and over three grams of fiber. That means if you’re on a Nutrisystem weight loss program, you can count this delicious dessert as one PowerFuel, half of a SmartCarb and two Extras. Talk about a tasty win-win!

And it gets better: Making this decadent dessert is as easy as can be. To make this mouthwatering treat, you’ll need a few simple ingredients, including one packet of sugar-free instant chocolate pudding mix, two cups of nonfat milk, a quarter cup of walnuts, a half cup of pitted dates, one teaspoon of unsweetened cocoa powder, one tablespoon of unsweetened shredded coconut, a few slices of fresh, seasonal fruit (we love strawberries or pineapple) and some mint leaves for the garnish.

Once you’ve gathered your ingredients together, making this dirt pudding cups recipe is extremely easy. First, you’ll whisk together the pudding mix and nonfat milk, then let the mixture set for about five minutes. While you wait for the pudding mixture to set, you’ll add the walnuts, dates and cocoa powder to your food processor. Process until the mixture becomes nice and crumbly (like dirt!). Next, slice your fruit of choice into thin, matchstick-like pieces. Add the fruit and shredded coconut to the walnut and date mixture. This is the “dirt.” Then, simply spoon a half cup of the pudding into individual cups and top with the walnut-date mixture. Finally, you’ll garnish each dirt cup with a mint leaf and that’s it! Your adorable and delicious Dirt Pudding Cups are ready to devour.

This Dirt Pudding Cups recipe makes four nicely sized servings, making it a great post-dinner treat the whole family can enjoy. But the great thing about this delicious dessert is that you can easily double or triple the recipe and bring it along to holiday gatherings and parties with large groups of people. It’s a total crowd-pleaser. And while most people only think of making this fun dessert during the spring, there’s no reason to deny yourself this delicious treat year-round! During the winter months, you can add a little extra coconut for a snow-like effect on your dirt pudding cup. In the summer, you can add a little paper umbrella or some edible flowers for a fun and seasonal twist on these dirt cups!
